Do you like Mexican Street Corn? Then look no further than our Baja Blend spice rub. This is the perfect spice rub for your corn on the cob, along with a little butter and some Cotija Cheese, some fresh Cilantro and Lime.
Here’s the recipe:
- 6 ears corn, unhusked
1/2 cup unsalted butter
¼ cup crumbled Cotija cheese
¼ cup chopped fresh cilantro
2 teaspoons Fessler’s Baja Blend
2 limes, juiced
Preheat the grill to 350 degrees F (175 degrees C).
Place corn, in husks, directly on the grill rack.
Roast on the grill turning occasionally until cooked through, 40 to 45 minutes.
Peel down husks and rub each ear of corn with butter. Sprinkle each with Cotija cheese, cilantro, Fessler’s Baja Blend, and lime juice. Serve.
